PREP: 20 minutes   SOAK: 15 minutes   GRILL: Approximately 1hr


3 to 4 Hickory wood chunks or a handful of chips

Select 4 pork loin chops, cut 1 1\2 inches thick

1\2 tablespoon brown sugar

1\2 teaspoon salt

1\2 teaspoon paprika

1\4 teaspoon chili powder

1\4 teaspoon freshly ground pepper

1 tablespoon cider vinegar


At least 1\2 hour before grilling, soak wood chunks or chips in sufficient water to cover.

Prepare your rub in a medium-sized bowl by stirring together the brown sugar, salt, paprika, and pepper. Brush the chops with the cider vinegar liberally. Lightly sprinkle the rub evenly over both sides of your chops.

Drain your wood chips. In a grill arrange your preheated coals placing your wood chips in drip pan in order to create a light smoke according to the grill manufactures specifications.

Place chops on the grill rack and grill until the chops juices run clear. SERVE CHOPS. MAKES 4 SERVINGS
